Macadamia Crusted Fish

Enjoy a nutritious twist on fish and chips with macadamia-crusted fish and baked sweet potato chips.

  • 1 medium sweet potato
  • 2 tbsp olive oil
  • 1 tbsp mixed herbs
  • 1 clove garlic, minced
  • ¼ cup macadamias, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 1 lemon, zested and juiced
  • Cracked pepper, to taste
  • 2 fresh fish fillets, or thawed frozen fish (approximately 300g)
  • 2 cups mixed salad leaves
  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Wash and dry the sweet potato before cutting into chip-sized pieces.
  3. Toss sweet potato chips in 1 tablespoon of olive oil and mixed herbs, spread them evenly on lined baking tray and bake in the oven for 10 minutes.
  4. In a small bowl, combine the remaining 1 tablespoon of olive oil, garlic, macadamias, parsley, lemon zest, half the lemon juice, and pepper to create the macadamia crust mix.
  5. Coat fish fillets evenly with macadamia crust mix, pressing gently to help it stick.
  6. Remove sweet potato from the oven and add fish fillets to the tray.
  7. Return the tray to the oven and bake for another 10-15 minutes, or until the fish is cooked through and the sweet potato chips are golden.
  8. Toss salad leaves in remaining lemon juice.
  9. Serve the macadamia crusted fish and sweet potato chips with the dressed salad leaves.

Serving Suggestion: Macadamias can also be swapped for other nuts or seeds you may have on hand, such as cashews or pepita seeds.

This recipe could also be cooked in an air fryer. Simply cook the chips for 5-7 minutes and then add the fish and cook for a further 5-7 minutes, depending on the thickness of the fish.

Storage: Macadamia crusted fish is best enjoyed immediately after preparation to enjoy its best texture and flavour.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help toss the sweet potato in the oil and spices, measure the ingredients, and help coat the fish in the macadamia crust.
