Sweet Potato Chips

You won’t have to sacrifice on taste or indulgence when it comes to these delicious, oven-baked, sweet potato chips.

  • 2 large sweet potatoes, unpeeled, cut into chip size
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp curry powder
  • 1 tbsp paprika
  • 1 tbsp mixed Italian herbs
  • 2 tbsp low fat Greek yoghurt^
  • 2 tbsp olive oil to drizzle

 

^To make dairy free: replace Greek yoghurt with calcium-fortified dairy free alternative.

  1. Preheat oven to 200°C. Line 2 baking trays with baking paper.   
  2. In a large bowl combine the spices and 2 tablespoons of oil. Add the sweet potato and stir to coat them evenly in the spice mix.    
  3. Spread onto the baking trays and bake for 30 minutes if thinly cut, 40 minutes if thickly cut, or until golden and crispy. 
  4. Serve with Greek yoghurt and olive oil. 

Serving Suggestion: Spices can be swapped for other herbs and spices you may have on hand such as garlic powder, thyme, oregano, or rosemary. Try flavouring the yoghurt dip with your favourite herb or spices before serving.

Enjoy alongside one of our colourful salads, and a serve of protein tofu, lentils, chicken or fish for a balanced meal.

Storage: Sweet potato chips are best enjoyed immediately after preparation.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help measure the ingredients, and help coat the sweet potato in the spice mix.
