Caramelised Pineapple Skewers

Enjoy these fresh pineapple wedges that have been lightly grilled to let the natural juices and sweetness really shine.

  • 1 ripe large pineapple
  • 2 tsp honey
  • 1 lime, juiced
  • ½ tsp cinnamon
  • Spray of olive oil
  • ¾ cup Low-fat Greek yoghurt^

^To make dairy free: replace Greek yoghurt with a calcium fortified dairy free alternative.

  1. To peel pineapple, lay the pineapple on its side cut off the top and bottom using a sharp knife. Stand the pineapple upright. Carefully slice down the sides, following the curve of the pineapple, keeping the knife as close to the rind as possible. Remove any remaining rind using a paring knife to carve them out.
  2. Cut the pineapple lengthways into 8 wedges and remove the core. Insert a skewer into each wedge. Place the pineapple skewers on a large baking tray.
  3. In a small bowl, whisk together the honey, lime juice and cinnamon. Pour the glaze over the pineapple skewers.
  4. Heat a grill pan on medium heat and lightly spray with oil. Cook half of the skewers on the grill for 3-4 minutes each side or until golden. Remove from pan and repeat with the remaining skewers.
  5. To serve, arrange the skewers on a serving platter, with the Greek yoghurt on the side for dipping.
  • Serving suggestion: If you don’t have a grill pan, a fry pan or barbecue grill on medium heat will also work.
  • Storage: Store caramelised pineapple in an airtight container in the refrigerator for up to 3 days.
  • Kids in the kitchen tips: Depending on your child’s age and skill, they can help measure the ingredients, prepare the glaze and coat the pineapple in it.
