Bircher Muesli with Poached Pears

Creamy, crunchy and mouth-wateringly good, this fibre filled breakfast bowl is as delicious as it is nutritious.

  • 1 ½ cups rolled oats
  • ¼ cup almonds, chopped
  • 2 ½ tsp ground cinnamon
  • 2 granny smith apples, grated
  • 1 orange, juiced
  • 1 cup reduced fat milk
  • ½ cup plain Greek yoghurt
  • 2 pears, peeled and sliced in half
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • Water
  • 1 cup fresh blueberries, to serve
  1. Place the rolled oats, almonds and 1 ½ teaspoons of the cinnamon in a bowl. Mix to combine.
  2. Add the apples, orange juice, milk and yoghurt to the bowl.
  3. Stir all ingredients together to combine. Cover and refrigerate overnight.
  4. For the poached pears, place the halved pears in a large saucepan, along with the remaining 1 teaspoon of ground cinnamon, ground ginger and vanilla extract. Cover with water and gently mix to incorporate the ingredients. Bring to the boil and allow the pears to simmer for 15 – 20 minutes or until tender.
  5. Once cooked, use a slotted spoon to remove the poached pears from the liquid and allow to cool slightly.
  6. Divide the prepared bircher muesli among 4 bowls and top each bowl with a halved poached pear and fresh blueberries.

Serving Suggestion: Almonds can also be swapped for other nuts or seeds.

Blueberries can be replaced with other fresh or frozen berries, or any seasonal fruit you have on hand.

Traditionally served chilled, bircher muesli can also be enjoyed warm for a cosy start to your day. Simply heat it in the microwave before serving.

Storage: Store bircher muesli in an airtight container in the fridge for up to 3 days.
