Strawberry Ricotta Toast

This delicious yet nutritious strawberry ricotta toast is a healthier alternative to the usual French toast.

  • 2 slices wholemeal bread, lightly toasted
  • 12 medium strawberries, sliced
  • ½ cup ricotta cheese, reduced fat
  • 1 tsp honey
  • Finely chopped mint
  • Pinch of cinnamon
  1. Spread ricotta on toast.
  2. Top with sliced strawberries and your choice of toppings.
  3. Serve immediately and enjoy.

Serving Suggestion: Ricotta cheese can be swapped for cottage cheese as an alternate option. Add extra nuts and seeds such as slivered almonds or chia seeds for extra fibre, or frozen blueberries or pear for extra fruit!

For a savoury alternative, try swapping strawberries and honey for cherry or grape tomatoes and fresh basil.

Storage: This toast is best enjoyed immediately after preparation to keep it from becoming soggy. For optimal freshness, store the ingredients separately and assemble just before eating.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help wash the strawberries, add the strawberries and other toppings to the toast.
