Strawberry, Walnut, Parmesan and Rocket Salad

Fresh, vibrant, and beautifully balanced, this salad brings together sweet, peppery, and savoury flavours.

  • 4 cups rocket, washed and dried 
  • 400g fresh strawberries, chopped 
  • ¼ cup walnuts, toasted and roughly chopped 
  • ¼ cup shaved Parmesan cheese 
  • Fresh basil leaves, torn

DRESSING 

  • 2 tablespoon olive oil 
  • 1 tbsp balsamic vinegar* 
  • 1 tsp honey 
  • ½ tsp Dijon mustard*

*For gluten free, check the products are ‘gluten free’.  

  1. Add salad ingredients to a shallow bowl or plate and gently mix together. 
  2. To make dressing: In a small bowl, combine dressing ingredients and mix well. 
  3. Drizzle dressing over salad before serving.   

Serving Suggestion: Parmesan cheese can be swapped for other cheese you may have on hand such as reduced-fat fetta.

For a balanced meal, enjoy alongside a serve of protein such as tofu, lentils, lean meat or fish, and a small carbohydrate serve of rice, pasta, quinoa, or bread.

Storage: This salad is best enjoyed immediately after preparation; leftover salad could be stored covered in the fridge for 1 day. For optimal freshness, store the ingredients separately and assemble just before eating.
