Baked Apples with Honey Cottage Cheese

Sweet, creamy and delicious, these warm baked apples are a perfect little snack or healthy dessert option. This recipe is great for using up old apples in the fridge and requires minimal effort.

  • 2 red apples, cut in half and seeds removed
  • 4 tbsp low-fat cottage cheese
  • 2 tsp cinnamon
  • 1 tbsp honey
  • 1 tsp vanilla bean paste (optional)

^To make Dairy Free: replace cottage cheese with dairy free yoghurt alternative.

  1. Pre-heat the oven to 200°C (180°C fan forced) or skip this step if you have and plan to use an air fryer.
  2. Sprinkle each apple with cinnamon and spread with a small amount of vanilla paste (optional).
  3. Place apples facing upwards onto a lined baking tray, or into an air fryer basket.
  4. Bake apples for 25-30 minutes or until soft.
  5. Remove from oven or air fryer and transfer each apple into a bowl. Top with 1 tbsp cottage cheese and a drizzle of honey.
  6. Serve immediately and enjoy.

Serving suggestions:

  • For an extra crunch, top with crushed nuts, such as walnuts or almonds.
  • You can substitute the cottage cheese for low-fat plain Greek yoghurt or low-fat custard if you prefer.

Storage: Baked apples can be stored in an air-tight container in the fridge for up to 3 days. Simply reheat in the microwave and top with cottage cheese just before serving.

Kids in the kitchen: Depending on your child’s age and skill, they can help with sprinkling the cinnamon onto the apples, scooping the cottage cheese on top, and drizzling the honey.
