Cauliflower Fried Rice

  • 2 tablespoons canola oil
  • 2 eggs, lightly beaten
  • 500g chicken breast
  • 1 onion, diced
  • 1 clove garlic, crushed
  • 500g frozen cauliflower rice
  • 1 cup frozen carrots, peas and corn
  • 1.5 tablespoons light soy sauce*
  • Spring onion curls, for garnish

*For Gluten Free: check product label to ensure soy sauce is gluten free.

  1. Place the chicken in a saucepan. Add enough water to just cover the chicken. Bring to a gentle simmer over medium heat. Reduce heat to low, cover and cook for approximately 12-15 minutes or until cooked through. Remove the chicken from the water and let it rest for 5 minutes. Place in a bowl and shred using 2 forks.
  2. Heat half the oil in a non stick wok or large frypan over medium heat. Pour in eggs, swirl over the base to form a thin omelette. Cook until just set. Remove from wok and set aside.
  3. Increase heat to medium-high and add remaining oil. Sauté bacon and onion for 4-5 minutes or until lightly browned. Add garlic and continue to cook for 1 minute. Add frozen cauliflower rice and frozen vegetables. Stir fry for 6 minutes until softened. Remove from heat and stir through light soy sauce.
  4. Roll up omelette and thinly slice. Serve cauliflower fried rice topped with egg. Garnish with spring onion and serve.

Serving suggestion: Swap frozen vegetables for fresh options you have in the fridge.

Cauliflower rice can be swapped for brown rice if you prefer.

Storage tips: Cauliflower rice can be stored in an airtight container in the fridge for up to 3 days.

Kids in the kitchen: Depending on your child’s age and skill, they can help with cracking the eggs into a bowl and lightly beating them, and measuring out the ingredients.
