Fruit Meringue Nests

Here’s a healthier twist on the traditional Pavlova, that’s still delicious and celebrates Queensland’s summer fruits.

  • 400g reduced sugar passionfruit yoghurt
  • 250g strawberries
  • 125g blueberries
  • 1 mango
  • 2 large eggs
  • ½ cup caster sugar
  1. Pre-heat oven to 120°C or 100°C (fan forced)
  2. Line two baking trays with non-stick baking paper.
  3. Remove the eggs from the fridge and immediately separate the egg whites from the yolks, as they are easier to separate when cold.
  4. Crack the egg in half on the rim of a bowl. Gently transfer the yolk back and forth between the two halves of the eggshell, allowing the egg white to fall into the bowl. Take care not to break the yolk.
  5. Place egg whites in a large clean, dry bowl. Use an electric mixer to whisk egg whites until soft peaks form and there is no liquid whites left.
  6. With the electric mixer still going, add the sugar one tablespoon at a time.
  7. After the sugar is added, increase the speed and whisk on high for 2 minutes. Meringue mixture should be glossy and when you rub between fingers, there should be barely any sugar grit.
  8. Add mixture in small dollops onto baking tray lined with baking paper, making 8 little ‘nests.’
  9. Bake for approximately 30 minutes, then turn off the oven, keep the door closed and leave to cool. Meringue should be dry and able to be lift off the paper.
  10. To assemble, chop fruit of choice into small pieces. Add yoghurt to meringue, top with fruit as desired. Enjoy.

Serving Suggestion: Fruits can be swapped for other fruits you may have on hand such as kiwi fruits, banana, peaches or passionfruit.

Storage: Meringue Nests are best enjoyed immediately after preparation assembling. For long-term storage, keep baked and completely cooled unassembled meringue nests in an airtight container at room temperature, in a cool, dry, dark place, for up to 2 weeks.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help by adding the sugar 1 tablespoon at a time to the egg whites in step 5 and select and assemble the fruit in each nest.
