Mango, Avocado and Macadamia Salad
15 min prep
6 serves
1.8 serves of veg
0.5 serves of fruit
  • 2 medium mangoes, diced
  • 2 medium avocados, diced
  • 1 ½ tbsp lime juice
  • 1 ½ tbsp olive oil
  • 1 garlic clove, crushed
  • 1 large red chilli, deseeded and sliced
  • 150g rocket leaves (approx. 5 cups)
  • ¼ cup mint leaves, finely chopped
  • ¼ cup macadamia nuts, roughly chopped
  1. To make the dressing, combine the lime juice, olive oil, crushed garlic, and sliced chilli in a small bowl.
  2. Place the rocket in a large bowl and add the finely chopped mint leaves, diced mango and avocado. Add the dressing and gently toss to combine.
  3. Sprinkle with chopped macadamia nuts to serve.

Serving Suggestion: Rocket can be swapped for other salad leaves you may have on hand such as baby spinach or mixed lettuce leaves.

Macadamia Nuts can be swapped for other nuts and seeds you may have on hand such as almonds, pepita seeds.

Pair with your choice of protein such as tofu, lean meat or fish.

Storage: This salad is best enjoyed immediately after preparation to prevent the ingredients from becoming soggy and the avocado from browning. For the best results, store the components separately and assemble just before eating.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help by chopping the avocado with a bread and butter knife, adding the ingredients to the salad bowl and gently mixing everything together.
