These tasty squares are a wholesome twist on the classic carrot cake.
1 cup quick oats
½ cup wholemeal self-raising flour
1 tsp ground ginger
½ tsp ground nutmeg
2 eggs, whisked
1 ½ tbsp canola oil
1 ½ tbsp honey
½ orange, juiced and zested
3 large carrots, grated
1. Pre-heat oven to 200°C (180°C fan-forced). Line a 20 cm x 20 cm square baking tin with baking paper.
2. Place the quick oats, flour, ginger and nutmeg in a large mixing bowl and mix to combine.
3. Make a well in the centre and add in the eggs, oil, honey, orange juice, orange zest and grated carrot. Mix together.
4. Pour mixture into prepared pan and bake for 25-30 minutes or until firm to touch. Transfer to a wire rack to cool before slicing into 9 pieces.
This is a nutritious snack which should be consumed as part of a balanced dietary pattern rich in fruits and vegetables.
