Watermelon and Fetta Salad

A colourful medley of watermelon, cucumber, and crisp capsicum with tangy olives and crumbled fetta.
Watermelon and fetta salad

  • 1/8 Seedless watermelon, rind removed (roughly 500g) cut into 2cm cubes
  • 1 Lebanese cucumber, chopped
  • 1 small green capsicum, roughly chopped
  • ½ red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • 75g low-fat fetta cheese, cubed
  • ½ cup fresh mint, finely chopped, plus extra to serve
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  1. In a medium bowl combine the red wine vinegar and olive oil. Add, the watermelon, cucumber, capsicum, fetta, olives, red onion and fresh mint, gently toss the salad to coat.
  2. Pour the salad onto a serving plate and sprinkle over the extra mint.

Serving Suggestion: Fresh mint can be swapped for 1 tablespoon dried mint or fresh basil.

Serve alongside your choice of protein such as tofu, chickpeas, chicken or fish, and a wholemeal or gluten free pita bread for a more filling meal.

Storage: Leftover watermelon and feta salad can be stored in an airtight container in the fridge for up to 1 day. The watermelon will release liquid over time, making the salad watery. It’s recommended to drain any excess juice before serving.

Kids in the kitchen tips: Depending on your child’s age and skill, they can help chop the watermelon using a bread and butter knife or child safe knife, and combine the ingredients.
