Place the pumpkin on a stable cutting board. Insert the tip of a sharp, heavy knife into the centre of the pumpkin. Gently but firmly press down on the heel of the knife handle to push the blade into the pumpkin. The pumpkin will naturally start to split.
Cut one side of the pumpkin in half, then the other, to divide it into quarters.
Using a tablespoon, scoop out all the seeds and stringy pulp from the centre of each quarter. Trim off any stem and base on each quarter.
Cut each quarter into strips and then slice the strips into evenly sized cubes depending on the recipe requirements.
