Tomato Bruschetta with Goat Cheese
INGREDIENTS:
- 125g cherry tomatoes
- 1 or 2 Truss tomatoes (sliced)
- 80g marinated goats cheese
- 1 tbs olive oil
- ½ tsp pepper
- 2 tsp fresh rosemary leaves, chopped
- 2 tsp brown sugar
- 8 thin slices crusty Italian bread
- Chopped fresh basil or parsley
METHOD:
- Preheat grill to high.
- Sprinkle rosemary, brown sugar and 1 tsp of oil over the sliced truss tomatoes and place on baking tray to grill for 15 - 20 minutes.
- Remove the tomato slices and rest on the side.
- Place bread in a single layer on another large baking tray. Brush both sides with the remaining oil. Grill for 2 minutes each side or until toasted.
- Spread toast with goat's cheese and top with the grilled sliced truss tomatoes and fresh cherry tomatoes.
- Serve drizzled with extra oil.
