Tomato Bruschetta with Goat Cheese

The perfect snack, lunch or starter for when you have dinner guests – this tomato bruschetta with goat cheese is sure to please everyone.

INGREDIENTS:
  • 125g cherry tomatoes
  • 1 or 2 Truss tomatoes (sliced)
  • 80g marinated goats cheese
  • 1 tbs olive oil
  • ½ tsp pepper
  • 2 tsp fresh rosemary leaves, chopped
  • 2 tsp brown sugar
  • 8 thin slices crusty Italian bread
  • Chopped fresh basil or parsley
METHOD:
  • Preheat grill to high.
  • Sprinkle rosemary, brown sugar and 1 tsp of oil over the sliced truss tomatoes and place on baking tray to grill for 15 - 20 minutes.
  • Remove the tomato slices and rest on the side.
  • Place bread in a single layer on another large baking tray. Brush both sides with the remaining oil. Grill for 2 minutes each side or until toasted.
  • Spread toast with goat's cheese and top with the grilled sliced truss tomatoes and fresh cherry tomatoes.
  • Serve drizzled with extra oil.
