Strawberry, cucumber, watermelon and feta salad
INGREDIENTS:
- 2 cups watermelon, cubed or balled
- 1 cup strawberries, hulled and halved or quartered
- 1 cup cucumber, thinly sliced
- ½ cup reduced fat feta cheese, crumbled
- ¼ cup fresh basil leaves, torn or chiffonade
- DRESSING
- 3 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey
METHOD:
- Add watermelon, strawberry, cucumber, feta cheese and basil to a bowl and gently toss together.
- Combine dressing ingredients in a small bowl or jar with lid and shake well.
- Drizzle dressing over salad and toss before serving.
RECIPE NOTES:
For a bit of crunch, sprinkle some crushed walnuts or almonds over the salad.
