Layered Strawberry Parfait

Bright, creamy, and bursting with fresh strawberry flavour, this layered parfait is a feel-good treat that comes together in minutes and tastes like a little indulgence you can enjoy anytime.

INGREDIENTS:
  • 250g strawberries, chopped
  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon pumpkin seeds
  • 1 cup Greek yoghurt (reduced fat)
  • 1 teaspoon honey
  • A pinch of cinnamon
METHOD:
  • Lay chopped fresh strawberries in the bottom of a glass or bowl.
  • Sprinkle with a tablespoon of rolled oats.
  • Add a layer of yoghurt.
  • Sprinkle with the chia seeds and pumpkin seeds.
  • Repeat layers until glass is full or ingredients are used up.
  • Drizzle honey on top.
  • Garnish with a few whole strawberries and a pinch of cinnamon on top.
RECIPE NOTES:

If fresh strawberries aren’t available, you can use frozen strawberries or make a strawberry compote by simmering 1 cup of frozen strawberries with ¼ cup of water and a teaspoon of honey until reduced.

You can also swap the strawberries out for other seasonal fruit.
