Easy grilled vegetable skewers
INGREDIENTS:
- 2 medium zucchinis, cut into 1-inch slices
- 10 mushrooms (cup or brown), whole
- 1 medium red onion, cut into chunks
- 1 medium capsicum, cut into chunks
- 1 tbsp olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 8 bamboo skewers, soaked in water for 20 minutes
METHOD:
- Cut all the vegetables into 2cm chunks.
- Preheat a BBQ grill or hot plate to medium heat.
- Thread zucchini slices, mushrooms, onion chunks, and capsicum chunks onto skewers.
- Whisk olive oil, oregano, paprika in a bowl; brush some of the mixture over vegetables.
- Cook skewers on the grill until vegetables are tender, turning occasionally.
- Serve as a side and enjoy.
RECIPE NOTES:
Not a fan of capsicum? Swap it for cherry tomatoes or something else grill-friendly, like eggplant, squash or asparagus.
