Easy grilled vegetable skewers 

These grilled veggie skewers will add a pop of colour to any BBQ and are a kid-friendly way to get 1 whole serving of vegetables with each one. You could swap out the capsicum with cherry tomatoes, or any other of your other favourite veg.

INGREDIENTS:
  • 2 medium zucchinis, cut into 1-inch slices
  • 10 mushrooms (cup or brown), whole
  • 1 medium red onion, cut into chunks
  • 1 medium capsicum, cut into chunks
  • 1 tbsp olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 8 bamboo skewers, soaked in water for 20 minutes
METHOD:
  • Cut all the vegetables into 2cm chunks.
  • Preheat a BBQ grill or hot plate to medium heat.
  • Thread zucchini slices, mushrooms, onion chunks, and capsicum chunks onto skewers.
  • Whisk olive oil, oregano, paprika in a bowl; brush some of the mixture over vegetables.
  • Cook skewers on the grill until vegetables are tender, turning occasionally.
  • Serve as a side and enjoy.
RECIPE NOTES:

Not a fan of capsicum? Swap it for cherry tomatoes or something else grill-friendly, like eggplant, squash or asparagus.
