Strawberry, Walnut, Parmesan and Rocket Salad
INGREDIENTS:
- 4 cups rocket, washed and dried
- 400g fresh strawberries, chopped
- ¼ cup walnuts, toasted and roughly chopped
- ¼ cup shaved Parmesan cheese
- Fresh basil leaves, torn
- DRESSING
- 2 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
METHOD:
- Add salad ingredients to a shallow bowl or plate and gently mix together.
- Combine dressing ingredients into a small bowl or jar with a lid and shake well.
- Drizzle dressing over salad before serving.
RECIPE NOTES:
Add sliced chicken breast for extra protein or to turn this salad into a main meal. Feta cheese could be a substitute for parmesan.
