Strawberry, Walnut, Parmesan and Rocket Salad

Fresh, vibrant, and beautifully balanced, this Strawberry, Walnut, Parmesan, and Rocket Salad brings together sweet, peppery, and savoury flavours in a simple dish that feels both light and satisfying.

INGREDIENTS:
  • 4 cups rocket, washed and dried
  • 400g fresh strawberries, chopped
  • ¼ cup walnuts, toasted and roughly chopped
  • ¼ cup shaved Parmesan cheese
  • Fresh basil leaves, torn
  • DRESSING
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
METHOD:
  • Add salad ingredients to a shallow bowl or plate and gently mix together.
  • Combine dressing ingredients into a small bowl or jar with a lid and shake well.
  • Drizzle dressing over salad before serving.
RECIPE NOTES:

Add sliced chicken breast for extra protein or to turn this salad into a main meal. Feta cheese could be a substitute for parmesan.
