Layered Strawberry Parfait
INGREDIENTS:
- 250g strawberries, chopped
- ½ cup rolled oats
- 1 tablespoon chia seeds
- 1 tablespoon pumpkin seeds
- 1 cup Greek yoghurt (reduced fat)
- 1 teaspoon honey
- A pinch of cinnamon
METHOD:
- Lay chopped fresh strawberries in the bottom of a glass or bowl.
- Sprinkle with a tablespoon of rolled oats.
- Add a layer of yoghurt.
- Sprinkle with the chia seeds and pumpkin seeds.
- Repeat layers until glass is full or ingredients are used up.
- Drizzle honey on top.
- Garnish with a few whole strawberries and a pinch of cinnamon on top.
RECIPE NOTES:
If fresh strawberries aren’t available, you can use frozen strawberries or make a strawberry compote by simmering 1 cup of frozen strawberries with ¼ cup of water and a teaspoon of honey until reduced.
You can also swap the strawberries out for other seasonal fruit.
