Strawberry, cucumber, watermelon and feta salad

This refreshing strawberry, cucumber, watermelon and feta salad is a vibrant mix of sweet, crisp and salty flavours that’s perfect for cooling down on a warm day.

INGREDIENTS:
  • 2 cups watermelon, cubed or balled
  • 1 cup strawberries, hulled and halved or quartered
  • 1 cup cucumber, thinly sliced
  • ½ cup reduced fat feta cheese, crumbled
  • ¼ cup fresh basil leaves, torn or chiffonade
  • DRESSING
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
METHOD:
  • Add watermelon, strawberry, cucumber, feta cheese and basil to a bowl and gently toss together.
  • Combine dressing ingredients in a small bowl or jar with lid and shake well.
  • Drizzle dressing over salad and toss before serving.
RECIPE NOTES:

For a bit of crunch, sprinkle some crushed walnuts or almonds over the salad.
