Caramelised pineapple skewers
INGREDIENTS:
- 1 ripe large pineapple
- 2 tsp honey
- 1 lime, juiced
- ½ tsp cinnamon
- Spray oil
- ¾ cup Low-fat Greek yoghurt
METHOD:
- Using a large sharp knife, cut the pineapple lengthways into 8 wedges and remove the core. Insert a skewer into each wedge. Place the pineapple skewers on a large baking tray.
- In a small bowl, whisk together the honey, lime juice and cinnamon to combine. Pour the paste over the pineapple skewers.
- Heat a grill pan on medium heat and lightly spray with oil. Cook half of the skewers on the grill for 3-4 minutes each side or until golden. Remove from pan and repeat with the remaining skewers.
- To serve, arrange the skewers on a serving platter, with the Greek yoghurt on the side for dipping.
RECIPE NOTES:
If you don’t have a grill pan, a fry pan or barbecue grill on medium heat will also work.
